Before brunch became a competitive sport, there was the Dutch Baby—a buttery, puffed oven pancake that steals the show with just a skillet and some heat.
Despite the name, it’s not Dutch at all. This golden beauty was popularized in Seattle in the early 1900s, at a little spot called Manca’s Café. The owner’s daughter dubbed the dish a “Dutch Baby,” likely a twist on Deutsch (German), linking it to German pancakes known for their rise and sizzle. Since then, it’s become a beloved American classic—somewhere between a crepe, popover, and souffle.
But here’s the problem: the traditional recipe is all gluten.
Not anymore.
The Gluten-Free Dutch Baby, Reinvented with Petley Grain
We’ve rebuilt the Dutch Baby from the ground up using Petley Grain Gluten-Free All-Purpose Flour, so you can enjoy that signature puff without the wheat. The result? Light, airy, crisp on the edges, and irresistibly custardy in the center.
Whether you’re topping it with sweet berries or turning it savory with herbs and cheese, this gluten-free version brings the drama—without the gluten.
