Sometimes you don’t want a whole cake.
You just want a little cake—warm, comforting, and satisfying—without the heaviness that usually comes with it.
This gluten-free mug cake is designed to be lighter and more balanced than a traditional slice of cake. It uses fewer ingredients, less fat, and a naturally portion-controlled serving—while still delivering real cake texture and flavor.
Why This Mug Cake Is a Healthier Choice
- Portion-controlled – one mug, one serving
- Lower fat – just ½ teaspoon of oil
- Less sugar overall – far less than a typical cake slice
- Gluten-free – gentler for many people
- Egg-free – lighter texture and simpler digestion
- The bubbles create a lighter texture—no frosting required.
You get cake satisfaction without going overboard.
Just a Little Cake
Ingredients
- 3 tablespoons Petley Grain gluten-free cake mix
- 1 tablespoon milk (any type)
- ½ teaspoon oil
- 2 tablespoons club soda
- Pinch of salt (optional)
Instructions
1. Prep the mug
Lightly grease or spray a microwave-safe mug so the cake releases easily and stays soft.
2. Mix dry ingredients
Add the Petley Grain gluten-free cake mix and salt to the mug. Stir to remove any clumps.
3. Add milk and oil
Stir until smooth. The batter should be thick but pourable.
4. Gently fold in the club soda
Fold it in right before microwaving. Do not overmix—this keeps the cake light.
5. Microwave in two stages for best texture
- Microwave 30 seconds
- Rest 20–30 seconds
- Microwave again for 1 minute
6. Rest before eating
Let sit for 1 minute to finish setting and stay moist.
Tips & Variations
- Add a splash more milk for a softer cake
- Top with berries, a dusting of powdered sugar, or whipped cream
- If your microwave doesn’t allow power changes, reduce cook times slightly and watch closely
